CAFÉ 1820 FLAN SPECIAL

Ingredients

  • 200 g. of sugar
  • 2 tablespoons of instant (soluble) coffee
  • ½ liter of milk
  • 4 whole eggs
  • 2 egg yolks
  • Grated lemon peel
  • 1 stick of cinnamon

Preparation

1.

Cook 60 g. of the sugar in a small saucepan, stirring with a spoon until it turns light
brown. Spread the sugar in a 1-liter baking pan.

Cook ½ liter of milk with the cinnamon and lemon peel.

3.

Beat the 4 eggs together with the two yolks and 140 g. of sugar, vanilla and soluble
coffee.

Mix with the boiling milk, beat well and strain.

5.

Pour it all into the prepared baking pan and place it in a double boiler in the oven, without
letting the water boil, for 45-60 minutes.

6.

When set, take it out of the oven and allow it to cool.

7.

Remove from the pan and serve.
