CAFÉ 1820 RICE PUDDING
- Milk: 950 ml
- Rice: 50 grams
- Instant (soluble) coffee: 1 teaspoon
- Sweetener or sugar: to taste, depending on what is used
- Lemon rind: ½ lemon
- Cinnamon: 1 stick
- Ground cinnamon: 1 teaspoon, for decorating
Preparation

Peel the lemon for the rind. Be careful not to cut into the white part, which is bitter and would affect the taste. Heat the milk, rice, lemon rind and cinnamon stick in a pot. Cook over medium for 45 minutes, stirring constantly to keep it from sticking or curdling. Meanwhile, dissolve the coffee in a little milk. When it is completely dissolved, add it to the rice and cook until the mixture is smooth and creamy. Then add the sweetener or sugar and mix well. When the desired sweetness is obtained, take it off the heat and spoon it into individual bowls. Sprinkle a bit of ground cinnamon on top to decorate and serve.
